This is bottled for a Danish whisky society
called “Holbæk Whisky Society”. It is peated spirit matured in a Bourbon barrel
for 5 years, before it is finished for 2 years in a small Oloroso Sherry cask.
Only 54 bottles were made. Meaty sweet peat in the smell. Some grassy notes and
hints of oak and dried fruits in the background.
A little alcohol kick in the taste. Dried
fruits, but still fresh, with a touch of white fruits. Crisp apples and sweet
dates. The sweet peat really comes forward in the finish! Some vanilla and oak
as well.
